The Student Welfare Authority’s Varsity Catering Service (VCS) got the auspicious opportunity to cater for the 56th Graduation Executive Luncheon that was being hosted by the Vice-Chancellor, Prof. Peter Mbithi at the Central Catering Unit (CCU). This was the first graduation luncheon under SWAs new Director Dr. Jackson K. Maalu.
The catering staff started preparations three days early just as the décor preparations. In such big events, additional catering staffs are taken from Kitchens and cafeterias from the different Strategic Management Units (SMUs) spread across various University campuses.
The décor comprised of rich blue and white University colours, with the national colours draped at the background of high table area. The ambience was cool and calm while the soft Rumba music played through the air creating a relaxed environment. Bouquet of flowers in nice transparent vases, covered with pearls made the table centerpieces.
The menu was rich and comprised of a wide variety of mouth watering dishes. Guests were to be served with; starters that comprised of Waldorf salad and cream vegetable soups, beef, fillet and roast lamb accompanied by saffron rice, roast potatoes, chapattis and nduma. Various desserts were available that included; fruit slices, Ice Cream and Cake with Custard Sauce. Various assorted wines were available together with soft drinks and beverages such as tea and coffee.
Distinguished guests who included UoN Chancellor, Dr, Vijoo Rattansi, the VC Prof, Mbithi and UoN top management arrived at noon and the luncheon was underway after SWA Director, Dr. Maalu made the welcoming remarks.
